Ingredients

1 bag Frozen Broccoli
4 tablespoons butter
1 small onion, chopped
2 tablespoons minced garlic
4 tablespoons all-purpose flour
3 cups milk
1 can Campbell’s Cheddar Cheese
1 1/4 cup shredded extra-sharp cheddar cheese
1/4 cup Parmesan cheese
1/2 teaspoon mustard powder
1/2 teaspoon smoked paprika
salt and pepper to taste
2 cups Carolina brown rice cooked according to package instructions (when cooked, it should be between 3 and 4 cups)
1/2 cup panko bread crumbs

Instructions

-Preheat oven to 350ºF.
-Microwave or steam broccoli according to package instructions
-Add saucepan to medium-low heat on stove. Once the saucepan is warm, add the butter until melted.

-Stir in the onions and garlic. Cook for about 7 minutes, or until the onions are softened.
-Add the flour over the onions
-Cook 2-3 minutes more, stirring constantly, until flour is golden brown.
-Slowly pour the milk into the saucepan, whisking to incorporate it into the flour as you pour. Once all the milk is in the saucepan, bring the mixture to a simmer, continuing to whisk constantly. Continue to cook, whisking often, until the sauce is thickened.
-Add the can of cheddar cheese until completely mixed in.
-Remove from heat and whisk in 1 cup of the cheddar cheese, the parmesan cheese, mustard powder, and paprika. Season to taste with salt and pepper.
-Spray bottom of 9 x 13 casserole dish. Transfer the cooked rice to the dish with the broccoli
-Pour the cheese sauce on top. Stir to incorporate; taste and add additional salt and pepper, if needed.
-Top with the remaining 1/4 cup of cheddar cheese and the panko bread crumbs
-Spray the top of the casserole with butter spray and bake for 25 minutes, then broil for about 3 minutes more, until the panko is lightly browned. Remove from oven and let the casserole sit for about 5 minutes before serving.
-Serve as a main dish or a side!

Our house always has some unexpected guests or parties to attend so I like to keep items for this Smoked Sausage Recipe in my pantry and freezer where I can whip up a snack at the last minute.

It is a favorite in my house!  I always have the brown sugar and maple syrup and whenever there is a sale at Tops Markets I stock up on packaged Kielbasa or Smoked Sausage to keep in the freezer.

 

Ingredients

  • 1 pkg Smoked Kielbasa
  • 1/4-1/2 cup Brown Sugar add to taste
  • Drizzle Maple Syrup1/8 cup Water

Instructions

  1. Slice Kielbasa or Smoked Sausage into 1/4 inch pieces
  2. Add to frying pan over medium heat
  3. Add brown sugar and water and mix until brown sugar dissolved
  4. Cook until water dissipates and sausage browns
  5. Drizzle maple syrup over the top and mix in to coat sausage
  6. Add to serving dish and insert toothpicks for easy self serve

One Pan Baked Chicken Thigh Recipe

This baked chicken thigh recipe was one of my Grandma’s favorites!

This easy and delicous meal is sure to please everyone in your family! You can feed a large family with this recipe very inexpensively if you purchase the chicken thighs when on sale. The green beans and red potatoes being cooked in one pan with the chicken allows you to get other things done while its baking! I love these types of easy one pan meals!

Ingredients

2 lbs red potatoes
12 cloves of garlic
1/4 cup olive oil
2 Tbsp fresh lemon juice
2 tsp seasoned salt
2 tsp Italian Seasoning
2 tsp dried rosemary
7-9 Chicken Thighs
Black Pepper to taste

Instructions

1) Wash Green Beans and trim. Wash and dice potatoes. Peel garlic cloves.
2) Spray baking dish or pan with cooking spray
3) Mix olive oil, lemon juice, seasoned salt, italian seasoning, and rosemary in a small bowl.
4) Drizzle half of the olive oil mixture over veggies and toss to coat.
5) Spread potatoes, green beans, and garlic cloves evenly in dish/pan
6) Arrange chicken thighs evenly on top of veggies and brush chicken with the remaining olive oil mixture, then sprinkle with black pepper
7) Bake at 425 degrees for 40-50 minutes or until thighs reach 165 degrees internal temperature
8) Remove chicken to a separate dish and cover with foil to keep hot
9) Stir veggies, and bake the green beans and potatoes for another 15-20 minutes or until potatoes are browned and cooked through. (to shorten cook time you can also microwave the potatoes for 5 minutes before putting into oven- this step then may be eliminated)
10) Serve chicken with green beans and potatoes. My family likes to have sour cream served with this dish!

Roasted Pork Loin Recipe with Cranberry Apple Sauce

 

My family loved this Roasted Pork Loin Recipe with Cranberry Apple Sauce. I was in the mood for something different and I had to use up some apples. I did not have cranberries but this turned out just as tasty by substituting with a can of jelled cranberries. My husband gets annoyed with me when I improvise but I refuse to run to the store for last minute items 🙂

Ingredients

Pork loin (purchase size based on your family)
Sprinkle Italian Seasoning
Sprinkle Meat Tenderizer
Sprinkle Pepper
4 cups apples, peeled and cubed (about 4 apples)
2 cups fresh cranberies or 1 can of jelled cranberries will work in a pinch
3 inches cinnamon sticks about 3each
1 tbsp ground Cloves
1 cups Sugar
1/3 cup cranberry juice

 

Pork Cooking Instructions

1) Preheat oven to 375 degrees
2) Spray baking dish with cooking spray
3) Add pork loin to baking dish. Add 1 to 1-1/2 inch of water to baking dish. Sprinkle italian seasoning, meat tenderizer and pepper on top of pork.
4) Cover and cook on 375 degrees for approx 20 minutes per lb of porkloin
5) While pork is cooking, prepare the cranberry apple sauce as directed below.
6) When required cooking time is complete, use a meat thermometer to test internal degrees to be at least 160 degrees.
7) Let pork cool for 10 minutes. Slice with sharp or electric knife.

Cranberry Apple Sauce Instructions

1) In a 3 quart saucepan, bring 1/3 cup cranberry juice to a boil
2) Add apples, jellied cranberry, cinnamon sticks and cloves.
3) Stir and reduce heat to medium-low or until just a simmer.
4) Continue to cook, uncovered for about 15 minutes or until the apples are just becoming tender.
5) Add sugar, stirring until sugar dissolves.
6) Cook for another 5 minutes.
7) Remove cinnamon sticks.
8) If apples did not boil down low enough, use a hand masher to make apples smaller.
9) Refrigerate.
10)When cold, taste and test sweetness. Add sugar to your desired taste.
11)Drizzle cranberry apple sauce over warm pork slices and serve

Unicorn Loaf Cake

Everyone loves a pretty loaf cake so why not have a Unicorn colored loaf cake? This vanilla loaf cake is sure to be a hit at your next gathering! Its super moist and topped off with a delicious vanilla sugar frosting.

INGREDIENTS:

Loaf Cake

2 boxes Vanilla Cake Mix
6 Eggs
1 cup Canola Oil
1 cup Water
Purple Gel Coloring
Pink Gel Coloring
Blue Gel Coloring
Teal Gel Coloring
4 Disposable Piping Bags
Cookie Sheet with parchment paper
Loaf Pan
Star Cookie Cutter

Vanilla Royal Icing

3 Egg Whites
1/4 tsp Cream of Tarter
3 cup Powdered Sugar plus 1/2 cup on stand by
1 tsp Vanilla
Pink Gel Coloring
Green Gel Coloring
Confetti Sprinkles

DIRECTIONS:

Loaf Cake

1) Make the 2 white cake mixes according to the boxes. Mix one box into a medium bowl and the other into another medium bowl.
2) Take the second white bowl and split it into 4 bowls.
3) Scoop 1 color of the 4 batters into one piping bag.
4) Repeat with remaining 3 colors.
5) Using the cookie sheet with parchment paper, take 1 of the piping bags, cut the tip off, pipe one line of the color batter from side to side. Repeat with the other colors. Example: purple, pink, teal, green, purple, pink, teal, green until the pan is covered in colorful lines.
6) Bake the cake at 350 degrees for for 20 minutes or until cake is baked and a toothpick comes out clean.
7) Take the star cookie cutter and cut out star shapes.
8) Spray loaf pan with non stick spray.
9) Pour some of the plain cake batter into the bottom of the pan.
10) Take your star shapes and place them standing up into the batter that is already in the loaf pan.
11) Slowly pour the remaining batter around the stars so that when it bakes, the batter will bake over the stars and you won’t see them.
12) Bake at 350 for 30-40 minutes or until a toothpick comes out clean.
13) Set aside and let cool before taking out and placing on your favorite serving dish.

Vanilla Royal Icing

1) Combine all ingredients, except the colors and sprinkles, into a standing mixer and beat until stiff peaks form.
2) Add the extra half cup of powder sugar if the royal icing looks like soup.
3) Once stiff peaks form, split into 3 bowls.
4) Add the two colors into the bowls, mix until you have your desired color, leaving one bowl white.
5) Add the white icing first over the loaf and then drizzle the pink and green.
6) Add the sprinkles and ENJOY!!!!!

Unicorn Loaf Cake Everyone loves a pretty loaf cake so why not have a Unicorn colored loaf cake? This vanilla loaf cake is sure to be a hit at your next gathering! Its super moist and topped off with a delicious vanilla sugar frosting.

Loaf Cake
  1. Make the 2 white cake mixes according to the boxes. Mix one box into a medium bowl and the other into another medium bowl.
  2. Take the second white bowl and split it into 4 bowls.
  3. Scoop 1 color of the 4 batters into one piping bag.
  4. Repeat with remaining 3 colors.
  5. Using the cookie sheet with parchment paper, take 1 of the piping bags, cut the tip off, pipe one line of the color batter from side to side. Repeat with the other colors. Example: purple, pink, teal, green, purple, pink, teal, green until the pan is covered in colorful lines.
  6. Bake the cake at 350 degrees for 20 minutes or until cake is baked and a toothpick comes out clean.
  7. Take the star cookie cutter and cut out star shapes.
  8. Spray loaf pan with non stick spray.
  9. Pour some of the plain cake batter into the bottom of the pan.
  10. Take your star shapes and place them standing up into the batter that is already in the loaf pan.
  11. Slowly pour the remaining batter around the stars so that when it bakes, the batter will bake over the stars and you won't see them.
  12. Bake at 350 for 30-40 minutes or until a toothpick comes out clean.
  13. Set aside and let cool before taking out and placing on your favorite serving dish.
Vanilla Royal Icing
  1. Combine all ingredients, except the colors and sprinkles, into a standing mixer and beat until stiff peaks form.
  2. Add the extra half cup of powder sugar if the royal icing looks like soup.
  3. Once stiff peaks form, split into 3 bowls.
  4. Add the two colors into the bowls, mix until you have your desired color, leaving one bowl white.
  5. Add the white icing first over the loaf and then drizzle the pink and green.
  6. Add the sprinkles and ENJOY!!!!!

Corned Beef Brisket

Easy and Delicious Corned Beef Brisket with Cabbage and Carrots

Corned Beef Brisket is one of my favorites and its so easy to prepare!! The saltiness of the corned beef is complimented by the blander cabbage taste for a delicious Irish meal.

Ingredients

2.5-3 lb Corned beef brisket
1 head Cabbage
6-7 each Carrots
1 tbsp steak seasoning
1 tbsp oregano/ italian seasoning
2 tbsp gravy master

Instructions

1) Place Beef Brisket in corningware cookware and add water approximately 1/2 way covering the beef. Add gravy master to water. Sprinkle Steak Seasoning and Oregano on top (pic includes seasonig packet below). Cover and cook in oven at 350 degrees for approximately 3 hours.
2) Most corned beef briskets come with a pre packaged seasoning package like tis. Add this also the top of the meat.
3) Cut Cabbage and Carrots and boil on stove covered until vegetables are soft
4) Remove Corned Beef from pot and let cool 5-10 minutes
5) Slice with sharp knife in thin pieces
6) Add corned beef, cabbage and carrots to large serving bowl and pour juice from corningware cook pot over the top
7) Serve with Irish Soda Bread

Healthy Spring Chicken Salad

This gluten free healthy chicken salad recipe with Spinach, Feta, Fruit and Bacon is gluten free, nut free, soy free, and corn free!! This is a must have for those with food allergies and the homemade dressing gives a great taste all will sure to love!

Serve as a main dish or smaller portions for a side dish!

INGREDIENTS:

Chicken Salad:

7 cups Baby Spinach
1/2 Red Onion
2-3 pcs. Grilled Chicken
10 Strawberries
1/4 cup Feta Cheese
6 slices Bacon
1/4 cup Dried Cranberries
Lemon Pepper Seasoning

Dressing:

1 cup Olive Oil
3 tbsp. Apple Cider Vinegar
1 tsp Salt
1 tsp Dried Basil
½ cup Strawberries, fresh or frozen
1/4 cup Fresh Lemon Juice
¼ cup Water

DIRECTIONS:

Chicken Salad

1) Season your chicken with lemon pepper seasoning evenly on all sides.
2) Place your chicken on a grill or in a pan and cook until done.
3) Slice your chicken into small slices approx. 1-2 inches thick.
4) Cook your bacon until crispy. Then rough chop your bacon into small bits.
5) Remove the hulls and slice your strawberries wash and pat dry.
6) Remove the skin and slice your onion into small slices.
7) In a large bowl add all of your ingredients and toss to combine. Once place on plates,  drizzle with your dressing and top with feta cheese and dried cranberries.

Dressing

1) Place all the the ingredients, in the order listed, into a blender.
2) Secure lid.
3) Blend for about 30 seconds or until smooth.

We all know the song about the Grey Stuff from Disney’s Beauty and the Beast and now here is a recipe to try it yourself! It is served at the “Be Our Guest Restaurant” in Walt Disney World and is extremely popular and tasty!

INGREDIENTS:

  • 1 package Instant Vanilla Pudding Mix
  • 1 1/2 cup Skim Milk
  • 15 Oreos (taken apart and filling scrapped off)
  • 1 container Cool Whip
  • 3 tbsp Instant Chocolate Pudding Mix
  • Small Edible Pearls
  • Plastic Dessert Tea Cups
  • Ziploc Bag, to crush the Oreos

 

DIRECTIONS:

  • Pour the contents of the vanilla pudding into a medium size bowl.
  • Add in the milk to the pudding and mix for 2 minutes until thick.
  • Add the cookies into a ziploc bag and take a rolling pin and lightly hit the cookies until crushed.
  • Pour the crumbs into the vanilla pudding and mix until combined,
  • Fold in the whole container of Cool Whip.
  • Add in the chocolate pudding.
  • Put into the fridge for 1 hour.
  • Take the piping bag and scoop the grey stuff into it.
  • Twist the top of the bag so that the grey stuff doesn’t come out.
  • Cut the tip of the piping bag.
  • Pipe into the dessert cups and top with the edible pearls.
