Airfryer Crispy Chicken Strips

Have you gotten yourself one of these nifty Airfryers yet?  If you have, I hope you tried and enjoyed the Healthy Airfried Brussels Sprouts Recipe we posted a couple weeks ago.  If not, I have the perfect main dish that you can prepare in your airfryer to serve with those tasty sprouts.

Do you have picky eaters at your house that you would like to serve fresh, homemade meals too instead of spending extra on the frozen brands?  My husband is not a picky eater at all but he will request these delicious, healthy Crispy, Crunchy Chicken Strips at least once a week.

These chicken strips are super easy to make and won’t last long…..your family will love them!!!!

Ingredients

1 lb Chicken Tenders
1 cup Seasoned Breadcrumbs
3 Eggs, beaten
1/2 tsp Salt
1 tsp Pepper
3 tbsp Olive Oil

Instructions

  • Preheat airfryer to 360 degrees.
  • In two separate bowls, set aside eggs and breadcrumbs.
  • Season the breadcrumbs with salt and pepper. Also add olive oil to breadcrumbs until moistened and mix well.
  • Dip chicken into eggs. Then dip into breadcrumbs. Press to ensure breadcrumbs are coated and evenly coated.
  • Shake off excess breading before placing in cooking basket.
  • Cook half of the tenders at a time. Cook for 10 – 12 minutes or until golden brown.

Easy Crockpot Buffalo Chicken Dip

This easy Crockpot Buffalo Chicken Dip is a staple in my house and is always requested by friends for parties! It’s always best when I have a couple of leftover chicken breasts from a previous dinner, but canned chicken will also work! There are 3 must have items for me to make this recipe. Blue Cheese (I prefer Kraft), Franks Hot Sauce and Sour Cream. I have made it with Ranch dressing and other hot sauces and without the sour cream, but this is my final version of the best tasting Crockpot Buffalo Chicken Dip!

The ease of putting in a crockpot and letting it cook, makes this a perfect weekend afternoon snack for my family. Our boys love it! If you are making this for your family snack rather than a party, you can cut the recipe in half. Serve with your choice of Tortilla Chips, Crackers, Bagel Chips and/or Celery.

If you are a couponer or shop discount grocery stores, you can make this for under $10
Here is what I paid for the ingredients by shopping Aldi discounted prices and Tops using coupons:

Kraft Blue Cheese- $.50  (Tops)
Tops Shredded Cheese $2 (Tops)
Tops Cream Cheese $1.49 (Tops)
Bison Sour Cream $1.50 = 1/4 of for recipe= $.40
1 Canned Chicken $1.69 (Aldi)
2 Chicken Breasts $.90 lb = $1.00 (Restaurant Depot)
Franks Hot Sauce $1 for bottle= $.50 for recipe (Tops)
Total = $7.48 (the chicken at $.90lb was a steal!)

  1. Cut & Shred Chicken Breast if using left over fresh chicken. You can always cook a few chicken breasts if none left over. Add 15 minutes to prep time.
  2. Add cream cheese, sour cream and chicken to crockpot. Mix together to blend into cream cheese
  3. Add hot sauce. Mix
  4. Add blue cheese and shredded cheese. I always rinse the blue cheese bottle with a little water to get all of it in recipe and to also give more liquid to recipe.
  5. Throughly mix all together.
  6. Cook on low in crockpot for 6 hours or high for 3-4 hours
  7. Periodically stir throughout cook time

I have had it for over 5 years and it is used 2-4 times per week at home. Its easy to clean and the knob control makes it very easy to use. The locklid makes it so easy to make a dish and bring it to a party without worry of it spilling in the back of your car!

CRAZY Monster Cookies: Tasty Oatmeal Cookie Recipe

Make sure to try these CRAZY Monster Cookies which are an Oatmeal Cookie Recipe with Semi Sweet Chocolate, White Chocolate and Peanut Butter chips! Your kids will love them!

Ingredients: 
3 Cups Flour
1 TBSP Baking Powder
1 TBSP Baking Soda
½ TBSP Ground Cinnamon
1 TSP Salt
1 Cup Unsalted Butter, room temp
1 ½ Cups Sugar
1 ½ Cups Brown Sugar, packed
3 Large Eggs, room temp
1 TBSP Vanilla
2 Cups Semisweet Chocolate Chips
2 Cups Peanut Butter Chips
2 Cups White Chocolate Chips
3 Cups Old-Fashion Oats
2 Cups Walnuts, chopped
1 Package Large Candy Eyes
2 Containers Black Decorating Icing

Instructions:

  • Preheat oven to 350 degrees. Line large cookie sheet with parchment paper.
  • Combine flour, baking powder, baking soda, cinnamon and salt in a bowl. Whisk ingredients together. Set aside.
  • Using an electric mixer, beat the butter and both sugars until creamy.
  • Slowly add one egg at a time to the butter and sugar mixture, beating after each addition.
  • Add vanilla beating to incorporate with the butter, sugar, and egg mixture.
  • Slowly add the flour mixture, one cup at a time, stirring to combine after each addition.
  • Mix in the chocolate chips, stirring to add.
  • Next, add the white chocolate chips, stir well to mix.
  • Add in the peanut butter chips, stir well. Add both oatmeal and walnuts continue to stir to mix well.
  • Using a ¼ cup, scoop out the cookie dough and place on the lined cookie sheet allowing space for baking between each cookie.
  • Bake the cookies for 15 minutes or until the edges of the cookies are lightly brown.
  • Remove from oven allowing to cool slightly before transferring the cookies to a wire rack to cool completely.
  • Once each cookie is cool use your black decorating icing to glue on the eyes.
  • Next, outline the mouth and fill it in with the rest of the black decorating icing.
  • Set aside to allow the icing to dry.

Heart-Shaped Rice Krispie Treats Recipe Dipped in Chocolate

INGREDIENTS:

5 TBSP Unsalted Butter
10 Cups Miniature Marshmallows, divided
1 TSP Kosher Salt
½ TSP Vanilla Extract
6 Cups Rice Krispies Cereal
Ghirardelli Chocolate Melting Wafers
Red Chocolate Melting Wafers

INSTRUCTIONS:

  • Line a 9×13-inch cookie pan with parchment paper, then coat with non-stick cooking spray. Set aside.
  • In a large saucepan melt the butter and miniature marshmallows over low heat until the marshmallows are just melted.
  • Add in the salt and vanilla, stir to combine.
  • Remove the pan from the heat, add the Rice Krispies and mix until it is completely and evenly coated with the marshmallow mixture.
  • Turn the mixture out into the prepared pan and, using a wooden spoon or spatula that has been coated in non-stick cooking spray, press the mixture firmly into a packed, even layer.
  • Allow to set at room temperature for at least 30 minutes.
  • Now use a heart cookie cutter and press it into the bars then remove slowly.
    Set to the side.
  • Using a double boiler fill bottom part 1/2 way with water, bring to a boil on high heat.
  • Place top pan onto bottom of double boiler and add your chocolate.
  • Stir to melt. Once melted reduce your heat to low.
  • Take your rice bar and dip half of it in the chocolate. Place the rice bar on a pan with parchment paper. Let it cool.
  • Repeat process with each heart.
  • Using the double boiler, melt the red chocolate wafers the same way as chocolate wafers.
  • Take a large spoon and drizzle the red chocolate onto of your rice bars.
    Let cool before serving.

Valentines Day Love Bugs Cake Ball Recipe

INGREDIENTS:

1 Box of Strawberry Cake Mix
1 Container Prepared White Frosting (not cream cheese)
1 Bag of Shredded Coconut
1 Container Gel Red Food Coloring
1 Container Gel Pink Food Coloring
1 Container of Small Candy Eyes
1 Package White Chocolate
1 Package of Milk Chocolate
1 Container of Small Red and Pink Hearts

KITCHEN TOOLS:

Ziploc Bags
Wax Paper
Parchment Paper
Cookie Sheets
Pastry Bags
Small Pastry Tips
Pencil or Marker

Make the Fuzzy Love Bugs:

  • Bake the strawberry cake following the directions on the box.  Allow the baked cake to cool completely.
  • Remove from the cake pan and put into a large bowl.  Use your hands to crumble the cake.
  • Add ½ of the container of the prepared frosting.
  • Begin to blend the frosting with the crumbled cake by working the two together with your fingers.
  • Test to make sure that you have used enough frosting by making a ball out of some of the cake/frosting mixture.  Add more frosting if the cake is not holding its shape.
  • Make small cake balls.
  • Place the cake balls into your freezer for about 15 minutes.  While cake balls are in the freezer begin to prep the coconut.
  • Place coconut into a ziplock bag.  Pour the pink coloring into the coconut bag.  Seal the gel food coloring and coconut.
  • With your hands work the color throughout the coconut.  When the color is even on all of the coconut place in a bowl.

Dipping the Love Bug in chocolate:

  • Place the bowl in the microwave to melt.  Follow the directions on the package.  Reserve some of the melted white chocolate for the feet and antennas.
  • Using two forks dip the cake balls into the melted candy ensuring that all of the cake balls is covered with the melted white chocolate.
  • Dip each chocolate coated cake ball into one of the bowls of colored coconut.  Roll to ensure all of the cake balls are evenly coated. Set the coated cake balls onto the parchment lined cookie sheets.
  • Use a drop of melted white chocolate to “glue” the candy eyes onto the cake ball.

Chocolate feet and antennas: 

  • Line a cookie sheet with parchment paper.
  • Using a pencil or marker draw feet for your love bugs. I like hearts as feet or you can be creative.
    Set to the side.
  • Put the chocolate into a microwave-safe bowl. Place the bowl in the microwave to melt. Follow the directions on the package.
  • Once melted spoon, the melted chocolate into your pastry bag.  Twist the top to secure the chocolate in the bag.
  • Trace your outline of your feet with the chocolate.  Then fill the feet with chocolate so it is solid.

Antennas:

  • Take your white or regular chocolate and pipe thick lines on wax paper.  You can have fun here be creative straight or curvy.  Now add your heart candy on the end.
  • Remove your chocolate feet and place on another cookie sheet. Take one set of feet and then add a drop of melted chocolate on the middle of the feet and place a cake ball right on top.
  • Now take a knife and create two slits on top of the cake ball for the antennas. Carefully insert your antennas into the cake ball.
  • Repeat process with all love bugs.
  • Let your love bugs sit for 1 hour before serving.

  15. CHOCOLATE FEET AND ANTENNAS: Line a cookie sheet with parchment paper.
  16. Using a pencil or marker draw feet for your love bugs. I like hearts as feet or you can be creative. Set to the side.
  17. Put the chocolate into a microwave-safe bowl. Place the bowl in the microwave to melt. Follow the directions on the package.
  18. Once melted spoon, the melted chocolate into your pastry bag. Twist the top to secure the chocolate in the bag.
  19. Trace your outline of your feet with the chocolate. Then fill the feet with chocolate so it is solid.
  20. ANTENNAS: Take your white or regular chocolate and pipe thick lines on wax paper. You can have fun here be creative straight or curvy. Now add your heart candy on the end.
  21. Remove your chocolate feet and place on another cookie sheet. Take one set of feet and then add a drop of melted chocolate on the middle of the feet and place a cake ball right on top.
  22. Now take a knife and create two slits on top of the cake ball for the antennas. Carefully insert your antennas into the cake ball.
  23. Repeat process with all love bugs.
  24. Let your love bugs sit for 1 hour before serving.

My husband calls me the “Queen of Gadgets.”  I guess I would have to agree with him…..but let’s not tell him.
First it was the pressure cooker, which I still LOVE…..NOW it is one of those Airfryers that has everyone intrigued. Read more about this tasty Healthy Fried Brussel Sprouts Recipe!

There is a quaint little restaurant in our city that serves fried brussel sprouts.  I was not a brussel sprouts fan at all but one night when we were out to dinner, we decided to give them a try.  Fabulous and delicious!!!!  So I thought there must be a way to make these tasty morsels healthier, yet taste just as good.

My husband actually thought the ones I had made in the airfryer were better than the ones at the local eatery.  I was very pleased to hear him say that.  Since then, I have made sliders, chicken strips, french fries and more in my handy dandy airfryer.  At some point in the future, I am going to give meatloaf a try.  Stay tuned.  🙂

Ingredients

3/4 – 1 lb Brussel Sprouts
3 – 4 tsp Olive Oil
1/2 tsp Salt

Instructions

  • Cut off the stems, cut in half vertically and remove any tough leaves. Rinse and shake dry.
  • Once brussel sprouts are prepared, place them in a plastic ziploc bag. Pour olive oil and salt over the brussel sprouts.
  • Seal bag and mix together thoroughly.
  • Preheat Airfryer to 390 degrees for 5 minutes.
  • Add brussel sprouts to airfyer basket. Set temp to 390 degees and the timer for approximately 15 minutes. During cooking process, remove basket and shake.
  • Sprouts are done when leaves are crispy and centers are tender.

You are going to LOVE this Pressure Cooker Chicken Noodle Soup!!  I haven’t posted a pressure cooker recipe for quite some time.  Don’t forget to try the Pressure Cooker Baby Back Ribs Recipe posted a few months back.  I am sure you will love them as much as we did.

Pressure cooker recipes are easy and love the way the recipes turn out.  I wanted to share this recipe for a delicious Chicken Noodle Soup prepared in the pressure cooker as well.

This is a great economical recipe that will feed your whole family.

Ingredients
3 large Boneless Chicken Breasts
3 Carrots peeled and chopped
1 medium Onion chopped
3 stalks Celery chopped
6 oz Egg Noodles
32 oz Chicken Broth
to taste Salt & Pepper

Instructions

  • Place raw chicken breast in pressure cooker and add two cups of water.
  • Set pressure cooker on manual for 15 minutes. When finished cooking, use the manual quick release to release the pressure rather than waiting for the auto release.
  • While chicken is cooking, prepare the celery, carrots and onion by chopping into small/medium pieces
  • Once you have done a quick release, remove chicken and pull chicken apart in chunks.
  • Place chicken, chopped vegetables and salt and pepper into pressure cooker. Add chicken broth to chicken and vegetables.
  • Set pressure cooker on manual for 30 minutes. When finished cooking, use quick release.
  • Once you have done the quick release, add egg noodles to chicken and vegetables in the pressure cooker.
  • Set pressure cooker on manual for 3 minutes. When finished cooking, use quick release.

These Easy Chicken Tacos are my favorite choice of a quick and inexpensive meal to serve to my family!

There are a few reasons I like these so much! I always have chicken in the freezer, lettuce, tomato and cheese in the fridge and I am usually able to find a deal on tortilla shells easily so I almost always have those too!
With the way our household is with the kids working and going to college, there is always someone that is not at the dinner table. Chicken Tacos are something any of my boys can heat up and make in 5 minutes AND its a healthier option than frozen or processed foods.

Ingredients:
4-6 Boneless Chicken Breasts
Hard Taco Shells or Soft Burrito Shells
Tomatoes
Lettuce
Shredded Cheese
Black Beans
Corn
Beans
Sour Cream
Taco Sauce
Salsa

 

Instructions:
Cut chicken in cubes
Cook chicken on stove in frying pan in butter and minced garlic for a little flavor until all pink is gone
If chicken is frozen, you can still cook in pan frozen and as cooking, remove chicken and cut into smaller pieces

Cut tomatoes, lettuce and serve with shredded cheese and numerous options of beans, corn, peppers or whatever your family likes

My ideal price for chicken is $1.49-$1.79lb and I load up my freezer when lower than $1.59lb. I can usually make these tacos for approximately $12 for 6 of us which is only $2 per person!
