Easy Chicken Tacos

 

These Easy Chicken Tacos are my favorite choice of a quick and inexpensive meal to serve to my family!

There are a few reasons I like these so much! I always have chicken in the freezer, lettuce, tomato and cheese in the fridge and I am usually able to find a deal on tortilla shells easily so I almost always have those too!
With the way our household is with the kids working and going to college, there is always someone that is not at the dinner table. Chicken Tacos are something any of my boys can heat up and make in 5 minutes AND its a healthier option than frozen or processed foods.

Ingredients:
4-6 Boneless Chicken Breasts
Hard Taco Shells or Soft Burrito Shells
Tomatoes
Lettuce
Shredded Cheese
Black Beans
Corn
Beans
Sour Cream
Taco Sauce
Salsa


Instructions:
Cut chicken in cubes
Cook chicken on stove in frying pan in butter and minced garlic for a little flavor until all pink is gone
If chicken is frozen, you can still cook in pan frozen and as cooking, remove chicken and cut into smaller pieces

Cut tomatoes, lettuce and serve with shredded cheese and numerous options of beans, corn, peppers or whatever your family likes
Wrap items in tortilla and microwave for 10 seconds and serve



The main cost of this meal is the chicken but the chicken goes a far way with all of the rest of the inexpensive ingredients that I have gotten close to free using sales and coupons. My ideal price for chicken is $1.49-$1.79lb and I load up my freezer when lower than $1.59lb. I can usually make these tacos for approximately $12 for 6 of us which is only $2 per person!

Ingredients

Instructions
  1. Cook ground beef in fryng pan with diced onion, drain fat
    stuffed pepper filling 1
  2. Add tomatoes
    stuffed pepper fill 2
  3. Cut tops off green peppers
  4. Dice the pepper tops and put them in to the frying pan with beef. Stir in rice and rest of dry ingredients, seasonings and cook until peppers soften
  5. Boil peppers in pot of water on stove, turning often. Cook until softened. Approx 10-15 minutes

  6. Spread couple spoonfuls of red sauce on bottom of corningware dish, add peppers. Fill with beef mixture

  7. Spoon red suace on top of each of the peppers, then sprinkle shredded cheese and parmesan cheese on the top.
  8. Bake until cheese is melted and ground beef is heated through. If you are making all at the same time should only take 15-20 minutes. If made the night before and refirgerated, cook for approximately an hour to make sure heated through.

I actually double this recipe and make with 4-5lb packages of ground beef when on sale in a Ground Beef Meal Deal at Tops Markets. Depending on the size of the beef package, you can get up to 14 peppers and then freeze half for another dinner!!

To serve this dinner to a family that does not all like peppers, the filling makes for great tacos/burritos!! I always try to keep some on the side for my more picky eaters!!!

Quick & Easy Pressure Cooker Baby Back Ribs Recipe!!

Recently I bought one of those “new fangled” pressure cookers.  I wasn’t sure exactly what I was getting myself into but must say…..I LOVE IT. I have made macaroni & cheese, cooked chicken in 10 minutes, these fabulous fall off the bone ribs and numerous other items. The food is fabulous each and every time.

This is a very easy and fast recipe for Baby Back Ribs that is delicious every time you make it in the pressure cooker. It is great with original BBQ sauce, but if you prefer some different flavor, then try different types of BBQ sauce until you find what suits you and your family.  Enjoy!!

  1. Remove membrane from back of rack of ribs and cut in half to fit better in pressure cooker pot.
  2. Pour apple juice and apple cider into pressure cooker pot.
  3. Place ribs in pressure cooker pot thick side down.
  4. Seal the pressure cooker and place release valve in seal position.
  5. Set cooker on meat/stew setting and set timer for 30 minutes.
  6. At end of cook time, leave on warm for 5 - 10 minutes.
  7. Then release the steam placing the valve in the release position. (Do not open cooker until all the steam has been released.)
  8. Remove ribs from pressure cooker and place on baking sheet.
  9. Cover with desired amount of BBQ sauce.
  10. Bake in 400 degree oven for 10 minutes.

Easy recipes are a must at my house with my crazy work schedule and these No Bake Peanut Butter bars are easy and inexpensive to make when you use Kellogg’s coupons to buy the Frosted Flakes to make them!
They never last more than an evening at my house!

You can even make this into a No Bake Peanut Butter Cookie recipe by just dropping them onto a cookie sheet. Make sure to try them!

Ingredients fo No Bake Peanut Butter Bars:

4 cups Kellogg’s Frosted Flakes® cereal
3/4 cup dried tart cherries
3/4 cup chopped dried bananas
1/4 cup dry roasted sunflower seeds
3/4 cup firmly packed brown sugar
1/2 cup light corn syrup
1/3 cup creamy peanut butter
1 tablespoon butter or margarine

Optional- substitute dried bananas with chopped dried apricots or peaches

Instructions for No Bake Peanut Butter Bars:

1. In large bowl toss together KELLOGG’S FROSTED FLAKES cereal, bananas, cherries and sunflower seeds.

2. In small saucepan combine brown sugar, corn syrup, peanut butter and butter. Cook and stir over medium-high heat until boiling over entire surface. Boil for 1 minute. Drizzle over cereal mixture. Gently stir until coated.

3. Firmly press into 12 x 8 x 2-inch baking dish lined with foil and coated with cooking spray. Cool completely. Use foil to lift cereal mixture out of dish. Cut into 2-inch squares.

2) Let your meal plan reflect your entire family – Sit down together and figure out what everyone really likes. Meal planning should not be about eating things you hate. In fact, the opposite is true. Because you are planning it out and putting meals together that make sense with what you have, you can make what you truly enjoy. Get feedback from everyone and make sure that you pick meals that reflect that feedback fairly.

5) When you slip, get back on the menu planning train as quick as you can – I say when because you will absolutely slip. Habits are not easily formed and mistakes will happen. You will be too tired to do it one week or something will get in the way. When this happens, simply jump right back into it when you can. Over time, menu planning will become your new normal in the kitchen and you won’t have to even really think about it.
